The back of the package usually tells a more complete story. The ingredient list shows what the product is mainly made from. The nutrition panel reveals its energy, sugar, fat, protein and sodium. Allergen warnings, date marks, serving sizes and licence details help you judge safety and value.

What Information Should an Indian Food Label Show?
Under FSSAI’s Labelling and Display Regulations, most pre-packaged foods must carry several key declarations. Some products have exemptions or additional category-specific requirements.

Step 1: Start With the Ingredient List
Except for single-ingredient foods, ingredients are generally listed in descending order by weight or volume at the time of manufacture. This means the first ingredient is present in the largest amount.
For example, a cereal may show:
Refined wheat flour, sugar, vegetable oil, whole wheat flour, cocoa solids, milk solids, emulsifier…
Despite pictures of wheat or a “multigrain” message on the front, the product is mainly refined flour, sugar and oil.
Use the first-three-ingredients rule
The first three ingredients provide a quick picture of the product’s foundation.
- If sugar appears first or second, it is a major ingredient.
- If refined flour comes before whole grains, the product is mainly refined grain.
- If oil or fat appears near the top, check total and saturated fat in the nutrition panel.
- If a protein product lists sugar or starch before its protein source, question its value.

Look for percentages of highlighted ingredients
When an ingredient is strongly emphasised through the product name, words or pictures, FSSAI rules may require its percentage to be disclosed. A mango drink, almond spread or strawberry yogurt should therefore be assessed by checking how much of the highlighted ingredient is actually present.
A large fruit image does not necessarily mean fruit is the main ingredient.
“Multigrain” is not the same as “whole grain”
Multigrain simply tells you that more than one grain is present. It does not tell you whether those grains are whole, refined or present in meaningful quantities.
Check for ingredients such as whole wheat, whole oats, brown rice, millet or whole-grain flour near the beginning of the list. A small amount of millet added to mostly refined flour does not make the product nutritionally equal to a predominantly whole-grain food.
Step 2: Compare Nutrition Per 100 g or 100 ml
Serving sizes vary between brands. One company may define a serving of granola as 30 g, while another uses 45 g. Comparing the “per serving” numbers alone can make the smaller serving look healthier.
Use the per-100-g or per-100-ml column for direct comparison.
Example: snack calories
A snack contains 520 kcal per 100 g. The package suggests a 25 g serving.
- One 25 g serving: 130 kcal
- A 60 g portion: 312 kcal
The package’s serving size does not control how much you eat. Calculate nutrients for your realistic portion.
What FSSAI generally requires in the nutrition panel
Most applicable packaged foods declare:
- Energy in kilocalories
- Protein
- Carbohydrate
- Total sugars and added sugars
- Total fat
- Saturated fat and trans fat when applicable
- Cholesterol for relevant animal-fat-containing products
- Sodium
Dietary fibre is useful but is not universally mandatory on every product. It is more likely to be declared when a fibre-related claim is made.
Step 3: Separate Total Sugar From Added Sugar
Total sugar includes naturally occurring sugar plus sugar added during manufacturing. Milk contains naturally occurring lactose. Fruit contains naturally occurring sugars.
Added sugar includes sugars added to the product, such as sucrose, glucose, honey, molasses and syrups.
Example
A flavoured yogurt may contain 12 g total sugar and 7 g added sugar per 100 g. The difference may come largely from naturally occurring milk sugar.
Neither number should be ignored:
- Added sugar helps identify how much sweetness the manufacturer introduced.
- Total sugar matters for the total carbohydrate content and may be relevant to people managing diabetes.
Common sugar ingredients
Sugar may appear under several names, including:
- Sugar or sucrose
- Glucose or dextrose
- Fructose
- Invert syrup
- Corn syrup
- Malt syrup
- Honey
- Molasses
- Fruit juice concentrate
- Dried fruit paste
These ingredients are not nutritionally identical in every respect, but they can all add sweetness and carbohydrate.
What “No Added Sugar” Actually Means
Under FSSAI’s Advertising and Claims Regulations, a “no added sugar” claim has conditions. The product should not contain added sugars, ingredients that contain added sugar, or ingredients used as substitutes for added sugar in a way that raises sugar content.
If naturally occurring sugars are present, the label should also indicate that the product contains naturally occurring sugars.
No added sugar does not mean:
- Sugar-free
- Carbohydrate-free
- Low-calorie
- Suitable for unlimited consumption
- Automatically appropriate for diabetes
A product sweetened with dates or concentrated fruit ingredients can still provide substantial sugar and calories, depending on the formulation.
Step 4: Check Sodium—Not Just “Salt”
Indian nutrition panels generally list sodium in milligrams. Sodium is one component of salt.
A useful approximation is:
Salt in grams ≈ sodium in milligrams × 2.5 ÷ 1,000
For example, 600 mg sodium is approximately equal to 1.5 g salt.
FSSAI’s reference values use 2,000 mg sodium as equivalent to 5 g salt for an average adult day. Your medical target may be lower.

A food does not need to taste extremely salty to contribute meaningful sodium.
Step 5: Look Beyond the Protein Number
Protein grams matter, but they do not tell you everything about a food.
Ask:
- What is the protein source?
- How much protein is provided per realistic serving?
- How many calories and how much added sugar come with it?
- Does the product contain useful fibre or micronutrients?
- Is it replacing a balanced meal or supporting one?
A protein bar with 20 g protein can still contain high added sugar, saturated fat or sugar alcohols that cause digestive discomfort. A cereal labelled “protein-rich” may provide only a small amount in the serving people actually eat.
Step 6: Review Fats Carefully
Total fat is not automatically unhealthy. The type of fat and the food’s overall nutrient profile matter.
Focus on:
- Saturated fat: Frequently high in products containing butter, ghee, palm fat, coconut fat or certain dairy fats.
- Trans fat: Aim for as little as possible. Check for hydrogenated or partially hydrogenated fats in the ingredient list.
- Oil source: FSSAI requires specific edible oils to be named rather than hidden behind a vague “vegetable oil” description in relevant ingredient declarations.
A “no cholesterol” claim can be technically true for a plant-based product while the food remains high in saturated fat, sugar or calories.
Step 7: Understand Regulated Nutrition Claims
Claims such as “low,” “free,” “source of” and “high” are not simply creative phrases. FSSAI sets conditions for their use.

What does “reduced” mean?
A reduced claim should compare the product with an identifiable reference food. FSSAI generally requires at least a 30% difference for energy or macronutrients and at least a 25% difference for sodium.
A product can contain “30% less sugar” than its original version and still be high in sugar. Always check the final number.
Step 8: Decode “Natural,” “Fresh,” “Pure” and “Traditional”
These words are regulated, but they can still create a strong health halo.
- Natural: Generally applies under defined conditions to a recognised food source with limited permitted processing. Composite foods cannot simply be called natural unless the applicable requirements are met.
- Fresh: Has restrictions related to processing and preservation. It is not a general synonym for healthy.
- Pure: Generally applies to a single-ingredient food with nothing added and within contaminant limits.
- Traditional: Refers to an established recipe, formulation or process that has existed substantially unchanged for a generation.
Terms such as “natural goodness” and “nature’s way” are not permitted under the cited FSSAI conditions, while misleading “home-made” or “home-cooked” claims are restricted.
Even a valid “natural” or “traditional” food may be high in sugar, sodium or saturated fat. The claim describes a characteristic—not the total health value.
Step 9: Check Allergens Every Time
FSSAI requires specified allergens to be declared separately using a “Contains” statement. These include:
- Gluten-containing cereals such as wheat, rye, barley and oats, subject to specified exceptions
- Crustaceans
- Milk
- Egg
- Fish
- Peanuts and tree nuts
- Soy
- Sulphites at regulated concentrations
Manufacturers can change formulations. A product that was previously safe for you may gain a new ingredient, so people with allergies should recheck each pack.
“May contain” or shared-facility statements describe possible cross-contact risk. People with serious allergies should follow advice from their allergist rather than guessing from the ingredient list.
Step 10: Understand Food Additives and INS Numbers
Additives may be declared by functional class and a specific name or International Numbering System number, such as “emulsifier (INS 322).”
An unfamiliar chemical-sounding name or INS number does not automatically mean the ingredient is unsafe. Additives perform functions such as preserving food, maintaining texture, controlling acidity or preventing separation.
The better questions are:
- Why is the additive present?
- Does the product contain several additives because it is highly formulated?
- Does the food still provide useful nutrition?
- Do you have a diagnosed sensitivity to a particular ingredient?
Do not label every additive as “toxic,” but do not let a “clean-label” claim distract from sugar, sodium or portion size either.
Step 11: Check the Veg or Non-Veg Symbol
Indian packs use a green filled circle within a green square for vegetarian food and a brown filled triangle within a brown square for non-vegetarian food.
FSSAI’s definition treats egg as non-vegetarian, while milk, milk products and honey are excluded from the non-vegetarian definition.
The symbol helps with broad classification, but vegans should still examine ingredients for milk, whey, casein, honey and other animal-derived ingredients.
Step 12: Read the Date and Storage Instructions
The current framework distinguishes between:
- Expiry or use-by: The end of the estimated period after which the product may not remain safe or suitable. Do not consume or buy the product beyond this date.
- Best before: A quality indicator that may appear as optional or additional information. Quality can decline after this date, but safety still depends on the food, packaging and storage.
Never rely on the date alone. Discard food earlier if the package is swollen, leaking, damaged, unusually discoloured, mouldy or smells abnormal.
Follow instructions such as “refrigerate after opening,” “consume within three days” or “store in a cool, dry place.” Once opened, the original printed date may no longer describe the practical shelf life.
Step 13: Verify the FSSAI Licence and Report Problems
The FSSAI logo and licence number identify the licensed food business and support traceability. They do not mean that the food is nutritionally ideal or individually approved by FSSAI.
Consumers can use FSSAI’s Food Safety Connect system to check licence or registration authenticity and report concerns involving unsafe food, labelling defects or misleading claims.
Keep photographs of:
- The front and back of the pack
- The batch or lot number
- The date marking
- The FSSAI licence number
- The defect or misleading claim
- The bill or order confirmation
Three Worked Examples
Example 1: “Healthy” breakfast cereal
The front says “multigrain” and “with iron.” The first ingredients are refined wheat flour, sugar, corn and vegetable oil. The product contains 22 g added sugar per 100 g.
Interpretation: Fortification with iron does not cancel a refined-grain, high-added-sugar profile. Compare it with a whole-grain option lower in added sugar.

- Check the first ingredients. They usually reveal whether the front-pack story is accurate.
- Consider price per serving. Premium packaging does not guarantee superior nutrition.
